Pumpkin butter is a seasonal treat that never fails to impress. Simple and delicious, most recipes make a pot full but I prefer to make this as I feel the need. Ingredients 1 15oz can pumpkin puree 1/2 cup apple sauce 1 tsp ground ginger 1/4 tsp ground cloves 1/2 to 3/4 cup white sugar. Amount dependent upon your sweet tooth 1 tsp ground cinnamon 1 oz good bourbon. More to taste. *Optional
Method Combine all ingredients in a small saucepan and bring to a "boil" stirring frequently. The mixture is thick so it doesn't boil as much as it sputters and pops. Keep stirring so you don't get any hot pumpkin mix on you. Add a touch of water to thin if you feel the need.
Reduce heat and simmer for 30 to 45 minutes stirring frequently.
Transfer to sterile containers and refrigerate
This awesome pumpkin butter goes well on morning English muffins, toast, waffles etc. I've been told to try this over sweet potatoes and I most definitely will.
