The pudding is made from one liter of fresh watermelon juice that has been lightly sweetened and spiced with cinnamon and cloves before thickened with potato starch over medium heat. When cooled, this mix has chopped dark chocolate folded in to mimic seeds. The cooled pudding is added to dessert glasses and topped with crushed pistachios and shaved dark chocolate.
