Looking for something creative to do with baby spinach. Graco you seem to have good suggestions. Any thoughts beyond sautee with garlic?

The classic Italian combination is fresh spinach steamed without water (there is plenty of water in fresh spinach to steam itself) in a covered saute pan and sauteed with olive oil and garlic. That's if you are looking for a side dish which is the old you. We no longer think of meals as a plate of meat, potatoes, and a vegetable so first on your list is working on your new and greatly improved healthy plant based mindset. Remember, plant based does not automatically translate into healthy. In the beginning that takes some planning. Lot's of vegetables, dark leafy greens, whole grains, beans, legumes, nuts, and seeds outta do it. The real question is how do I work more dark leafy greens into my diet, spinach being the most familiar. I use spinach mostly as an ingredient in other dishes. An example is Braised Coconut Spinach & Chickpeas with Lemon which uses a full pound. I take every opportunity I can to add dark leafy greens to my diet. I regularly eat lunch a Whole Foods salad bar where I can work spinach, kale, and romaine easily in along with chickpeas, tofu, mushrooms etc. It took me awhile to get used to the ridiculous pricing but there are tricks. it is sold by weight so bring your own non fat salad dressing, walnuts, craisins, and an apple. Yes, it is still overpriced but consider the alternative. I also make large salads at home. If you are not used to kale buy dino kale. Dino kale, supposedly called "dinosaur" because its long, narrow leaves look like reptilian skin, is an antique kale variety known as Tuscan, Black kale or Cavallo Nero. It is milder in flavor than the regular and will get you started. Add kale, collards, and other unfamiliar dark leafy green to green leaf or red leaf or romaine a little at a time. You will soon come to crave it. Balsamic vinegar, any vinegar, will be your friend here as will any other vegetables you like raw.

Thanks. I do the kale and salad thing and make my own dressing with evoo and balsamic and a drop or two of maple syrup for sweetness etc. The question was due to a bulk purchase of baby spinach and just looking for interesting ways to prepare besides the traditional and salads. I use a handful in my shakeology but it will never stay fresh long enough for me to use this much in those ways. I try to include some in lots of dishes like soups, egg beater omelettes, etc. but its not the main focus of the dish. I saw some pasta recipes with spinach but they were fat laden with creamy sauces. Tough to do those in a healthy way without butter, cream and cheese.

We're trying to get away from that mindset. Why so much spinach? One of the things that keep whole foods plant based diets interesting is eating a large variety of plant foods. Why egg beaters? Are you missing eggs or worried about protein? Veggie lasagna will use a bunch of spinach but I don't know how you feel about vegan lasagna. Have you played with nutritional yeast at all? I guess the real question is what is your goal with this diet because you're not fully committed. You've come this far. What's holding you back?

It is a model similar to the fast food industry. Whole, unprocessed foods contain thousands of micro nutrients acting together in complex ways that we can only guess at this point in time. Separating a few ingredients and packaging them as powders to be mixed into profit generating drinks and proclaiming them as SuperFoods is criminal. There is no substitute for real food. When is the last time you picked a powder packet from a meal replacement tree? Were we not born to feed ourselves with flavored powders any more than we were born to die of heart disease, cancer, diabetes, or obesity. The powder is always a last resort and one I never sign up for automatic monthly shipments. All meal replacement drinks are worse than scams. They give one a false sense of doing what's best.
