Whisk in water to make thinner batter. Stir in okra and onion.Over medium heat, add clarified butter to cast-iron skillet.Use a small ladle to pour batter into the skillet; pan should be hot enough to make batter sizzle.Cook until underside is brown, about 3-4 minutes. Flip and brown the other side. Repeat with additional batter, adding more butter as needed.*Changes may need to be made to adapt recipes to today's kitchens.
