It's close to sausage, so am putting this article and recipe here Scrapple, some history and a recipeI love a good homemade scrapple. That 'stuff' frozen in the stores is terrible

If you like scrapple, you might also like "Cretons" An alternate spelling if groton.
It is twice ground trimmed (pork) shoulder with salt white pepper and whole coriander (that must be fished out post cooking). A slow cooker works fine.
This spread is (IMO) a step up from liverwurst, even if it does slightly resemble same.
Mrs. Country store owner was the French-Canadian author. Much as she was a lovely person, she never was able to determine a correct spelling for her spread.
