first time i made beef ribs, they came out amazing - moist, meaty, flavorfull. they just said "beef ribs" on the package. the pic is what they looked like after. the second time, i ended up having to special order them and the meat guy ended up giving me beef back ribs. i was very unhappy how they came out as there was very little meat on the bone after a 4 hr smoke and they were pretty dry despite spritzing with apple juice and even though i took membrane off there were still membrane like substance that made it hard to bite through. can you please confirm what kind of ribs the first batch was? i feel like they may have been beef chuck or were they just a meatier beef back? i need to redeem myself. thanks so much.

Great looking ribs...nice job! They were just a meatier beef back rib. If the butcher takes the bones off the rib himself, that's usually what you end up with. If they order in beef back ribs from their supplier most the meat has been skinned off the bones. I don't care for these at all. Types of Beef Ribs

so do you suggest doing beef chuck/short ribs next time? They will take a little longer, but at least you will have some meat to chew on
