A small, 2" thick Bottom Round roast seasoned with salt, pepper, garlic and a couple pats of butter. In the water bath at 140° for 30 hours. After a quick sear in the frying pan Sliced. A tad over done for me, but perfect for the wife Served with garlic mashed potatoes, au jus and previously SV'ed green beans. NO knife was needed to eat this dinner. Tenderness and texture were perfect
