I was wondering what types of pork (trim, picnic, butt, etc.)branded sausage companies use in their product (Jimmy Dean, etc.). I've head something about them using sow meat...?

Unless specifically stated on the package or their website, sausage is made from sows and boars. When they say "whole hog" sausage, they mean it. They grind up stuff that we would never even think of grinding at home That's why you find bone chips and cartilage, etc in commercial sausage. For all intents and purposes, you wouldn't be able to taste the difference in sow or boar sausage, due to the spices. If in doubt, contact customer service of the sausage in question.
