12 oz package of fresh cranberries, rinsed and dried 1 cup white sugar Zest of one orange
Combine all in a bowl, dump into a large vacuum bag, try to keep the berries in ONE layer.
183° for 1 hour, maybe add 15 minutes Give a quick cool down in ice water to the point of where you can handle the bag without getting burned. Now smoosh and mush the cranberries while still in bag. Dump into a bowl.
Caution: these cranberries are FLOATERS! Make sure to keep the bag under water during the whole cook.
