I removed a couple of 6-oz Kobe Beef burgers from the freezer. Let them partially thaw so I could apply seasoning...Kosher Salt, Worcestershire black pepper and granulated garlic. The burgers were then encased in a Ziploc freezer pint bag using the straw method to remove the air. To the Demi for a 6 hr bath at 134° A quick sear.....(can hardly see it) and the interior is a nice medium-rare. Not sure what that dark spot is At this point you can add some cheese and toss it on a bun. Instead, I elected to make some mushroom gravy and serve them with mashed potatoes. This time around I used some Costco Organic Beef, 85/15 and made them into approx 5 oz patty's. Salt, pepper, garlic and put them in Ziploc freezer bags, sucked the air out with a straw. Went into the Demi at 138° this time. After the six hour bath..... A quick sear in some canola oil and served with green beans and Mac 'n' cheese These were cooked more to the wife's liking
