Sticky Rum BBQ Sauce
I saw this recipe in a magazine, I think it is Coastal Living, about a year ago and love it. If you like a spicy, sticky and sweet rum based BBQ sauce, give this a try. I usually triple the recipe and add a little more of this and a little more of that (love ginger and garlic) but will post single recipe. Hope you enjoy.
1 (one) cup of dark brown sugar 1/2 (one-half) cup dark rum 1/2 (one-half) cup of ketchup 1 (one) tablespoon jerk seasoning (McCormick's Caribbean Jerk is good) 1/2 (one-half) tablespoon of "Slap Ya Mama" (great heat seasoning) 1/4 (one quarter) teaspoon of liquid smoke (a little more of this item) 1 (one) teaspoon of lime zest 2 (two) tablespoons of fresh lime juice (more squeezed for Margaritas) 2 (two) tablespoons of soy sauce 1 (one) teaspoon grated fresh ginger (another little more of this items) 2 (two) garlic cloves, minced (another little more of this items)
All ingredients into pan over medium heat. Before it starts to boil I put it on simmer until reduced to desired "stickiness" stirring often. Let it cool and in the bottle it goes. Any suggestions for adding other ingredients to enhance sauce are very much welcomed.
