I just came back from a nice trip in Mexico during my stay I was asked to BBQ my yummy ribs. I had all my seasoning same brand and all just like back home. (California) I cooked them as I always do yet the taste was so off. The only thing I can think of is the meat. It was fresh from the local butcher vs my store bought ribs. Do the store bought ribs go thru some process that changes the way they taste vs fresh ones?

They were probably feeding the pig different than we do here in the states. Second guess would be the fuel you used to cook them with. Sorry you had to experience that.
