Has any one else tried injecting pork butts? I've injected my last 2 or 3 with Dale's Sauce and apple juice. Not only does it add flavor, it keeps it nice and juicy, too....however, I've also found that it cooks quicker. Hope somebody else tries it and lets me know their results. The following pics are of an 8lb butt, and another portion, injected, rubbed and smoked at 250-275° for approx 9 hours. Final internal pulling temp was 195°. Used Cowboy/Fresh Market and a few chunks of Kamado coconut lump for the heat source. A mix of hickory and cherry wood provided extra smoke. Use apporoximately a 10% ratio of solution to weight of meat. 16 oz solution to a 10 lb butt, etc
I'm also thinking that an injection of chicken broth wouldn't hurt a thing either.
