I want to store turkey bones to use in stock pot over the winter. I don't have a freezer, so how best to butcher turkeys and then store the bones to use later? Any suggestions appreciated.

You might want to look up on how to dry them and vacuum pack them with a home vacuum machine, like the Food Saver. Another possibility is canning the bones in gelatin.
I don't know much about either method, but I'm Google will come up with some answers for you.
