I see the two ends can be used for Burgers. Can I have the entire clod ground and used for burgers? It sure can, the Shoulder Clod has excellent flavor for burgers. Depending on the quality and fat cap, you may need to add more fat if you are looking for 80/20 or 85/15 final product.
