What is "pismo, or pizmo beef"
"PSMO"= Another name for the full tenderloin with the side muscle on and all outside fat removed, but the silver skin is still attached. The 'side muscle' is called the "psoas minor", hence the shortened term "PSMO" and though local venacular, now "pismo".
