This is a great snack for any time! The whole process takes about 2¼ hours...start to finish...but it's worth the wait. Use as a dip for crackers, chips, veggie sticks, etc, and it makes a great topping for a burger (hint: top the burger when it comes off the grill and then place a couple of cooked bacon strips over all). Feel free to experiment with the ingredients and the amounts AAB's "Pimento Cheese Spread"8 oz shredded Sharp Cheddar cheese 8 oz Mexi-4-cheese blend 8 oz soft cream cheese Small jar chopped pimento's (4 oz) ¼ cup ( + or - ) good mayonnaise 1 tsp prepared horseradish ½ tsp ground black pepper ¼ ( + or - ) Cayenne pepper Optional: Ranch Dressing Mix all the cheeses into a bowl, stir in the pimento's. Mix in the horesradish, pepper's and the mayonnaise. Taste test and adjust if necessary. Add the Ranch Dressing if you want a 'wetter' product or extra mayo. Scrape into a serving bowl, cover and refrigerate for at least two hours.
