Have you ever tried a caribbean jerk chicken or pork? If so do you have a recipe and cooking instructions on smoking.
If not i have a jerk recipe that i picked up in the islands that i can share, but have nothing to offer in terms of cooking techniques.

Most are too hot for my tastes. However, Penzey's has a new rub out called BBQ 3000 and I do beleive that if you added some cayenne pepper to it, it would be a suitable substitute for Jerk. By all means, share your recipe. Sorry for the late reply.
