She went on the Oval at 5:10 this AM, all 31.5 lbs of her.
We had a heck of a time scrunching her up to fit, but with the help of the side leg on the cooking grid, her snout is tucked in place. Then we needed a couple firebricks to prop her up
Broke two injectors and my Cabella one clogged, so she is only injected with Mojo on one side
250° with just straight Mali's Lump. Hoping she will be done around 1 PM so I can get her delivered to the party and back home before all the crap on the roads start.
Here she is getting a tan y'day afternoon (thawing out)
Seven hours in and she is chugging at 175° internal (perfecto so far!)
Figgered I better throw in a healthy salad for lunch cuz I know I'm going to blow the rest of the day with pork fat and beer!!!
Miss Piggy cooked for a total of 8 hours and I pulled her at 186° and into a heated cooler, covered with foil.
There was a miscommunication some where (no big surprise here!!) about the starting time of the party I thought it started at 2:00, so got the guest of honor there at 1:45 However, party wasn't supposed to start until 3:00
When Miss Piggy finally got out of the cooler, she was a little worse for wear
I wasn't happy with the finished product, but it appears the other 50 folks had no problem with it
