Mashed Cauliflower, AAB style
½ head of cauliflower, cut into florets 1 clove garlic, minced 1 TBS, +or -, reduced fat mayonnaise Salt and pepper to taste
Steam the cauliflower and garlic until cauliflower falls apart when stuck with a fork. Drain well; mash. Stir in mayo for desired texture, add salt and pepper to taste.
Great substitute for mashed potatoes.
