There is a MUCH better, but still just as easy way to make real Alfredo sauce.
1 1/2 c whipping/heavy cream 3 cloves garlic (minced) 1 shallot (minced) or 1/4 c red onion 1 tsp white pepper (black if you have to) Salt to taste 2 tbsp butter 1/2 - 3/4 c Parmesan/asiago cheese as needed to thicken Zest from 1/2 lemon if desired
Saute garlic and shallot/onion in butter over med-high until just lightly browned. Add cream slowly while whisking, bring to a simmer. DO NOT BOIL, cream will break. Slowly add Parmesan one tbsp at a time while whisking at a medium-slow pace. Wait until each tbsp has completely melted before adding the next. Add lemon zest just before service, sprinkle with paprika if desired.
For added color mince 1/2 tbsp of red pepper and/or chives, saute with garlic and shallot. For Chicken Alfredo, replace 1/4 c cream with chicken stock or add 1 1/2 tsp dry stock powder.
Enjoy!
