This isn't a plant based only recipe and method. We should all be eating home made fermented foods. We used to but we stopped. Just like we have stopped doing so many things that enhance our lives. This method is simple and effective. The finished sauerkraut is delicious and full of probiotics. You know. The stuff we like to pay scads of money for only to wind up with an inferior product. No need to spend big bucks for a ceramic fermentation crock with weights. Fido jars are cheap and easy to find online and in local stores. They make the fermentation process easy. Set it and forget it. A 68 oz Italian Fido jar requires 5 pounds of shredded cabbage to fill up. A couple of tablespoons each day is good for what ails ya. Good luck holding it down to a couple of tablespoons when the finished product is so fantastic. This 68 oz jar just finished after a 32 day ferment. The cabbage was shredded finer than I would have liked but I couldn't find my medium size food processor shredding disc and I was to lazy to slice it all by hand.
