About a month ago Starbuck's came out with their "sous vide egg bites" in two flavors, bacon/gruyere and roasted red pepper. None of the Starbuck's in my area carried them so I attempted to make my own. These do not resemble Starbuck's as I think they use a mold or a bag and use scrambled/beaten eggs, however mine are tasty in their own right I placed the eggs in a 165° water bath for 90 minutes, although 60 minutes is usually sufficient. Once done I gave them an ice bath and put into the fridge over night. If in a hurry four hours is enough. The next step was a royal pain in the ass, excuse my French Peeling hard boiled sous vide eggs is not for the timid. The egg is like a fragile piece of jello and the shell WILL stick to the whites due to some scientific term that I can't pronounce or understand! It's a tedious process and the eggs will not come out perfect. Next I cut the eggs in half, again not as easy as it sounds, and placed a ¼" slice of Vermont white cheddar cheese and a 1" slice of precooked applewood smoked bacon on each half. Under the broiler until the cheese is melted. Let cool slightly and serve. If I were to do these again I would sprinkle some Slap Ya Mama Cajun Rub on the egg before the cheese and bacon
