I've been making this Mark Bittman recipe in my kitchen oven but always wondered what a hint of smoke might add. Was not disappointed. Roast 1.5 pounds of finely chopped cauliflower at 400ºF until caramelized. 35 - 45 minutes. Make a batter of whole wheat flour and lite coconut milk and set aside while the cauliflower is roasting. When the cauliflower is done, sprinkle on a tablespoon or two of curry powder and mix it into the batter you made. Add 2 tablespoons oil (I used grape seed) to a nonstick pan and place on the grill until the oil is hot. Pour the batter into the pan and bake at 400º for about an hour. Serve warm as an appetizer, a snack, or with veggies as a lite meal. Maybe with a little tzatziki made from coconut yogurt. This is very good stuff. I like to add green onions but I forgot to buy any. As with all flatbreads, add any herbs, veggies, or spices you like and make it your own. Everybody seems to really like this flatbread. I know I do. The recipe is all over Al Gore's internets so I won't bother posting it here.
