The ArticleI have a tendency to agree with this. In all my years of shopping different grocery stores at various times of the day, I have never seen the deli breaking down a slicer for cleaning unless it was near closing time. Even at the butcher shop and deli the slicers were cleaned after the lunch rush and then at closing, which inadvertently fell into the specifications as we opened at 9:00 AM, lunch rush was over between 1 and 2 PM, and closing was at 6:00.
