This is easy and oh so addictive! Pre-heat your kitchen oven or smoker to 350°F. Add 1 tsp ground cayenne pepper (or to taste) to 1 cup brown sugar and mix well. Press the sugar/cayenne blend into both sides of 2 lbs high quality thick cut bacon and lay out on cooling racks. Place the baconated racks in foil covered baking sheets and bake until the tops are golden brown. About 15-20 minutes. Remove racks and brush bacon with maple syrup (the good stuff), flip, and brush the second side with maple syrup. Place back in oven for another 5-7 minutes. Remove from oven and sprinkle both sides of bacon with more brown sugar mix. Return to oven and bake until edges are browning well. Remove from oven. Immediately remove bacon to parchment paper to cool. The bacon will stick to the racks if allowed to cool on them. When cool, place finished bacon in fridge to firm up and slightly harden. Fancy them up and pass out to the nice and the naughty Merry Christmas Steve!
