Tasty little lunch or a dinner with a side salad 1-Avocado, halved and pitted 1-5oz can tuna, drained (tuna in olive oil is great) Shredded Cheddar Cheese Chopped chives Halve and pit the avocado. Sprinkle with lemon juice and pepper (optional) Drain tuna and make your normal tuna salad (I added just 2 tsp of pickle relish, 2 scant TBS of mayo and a shake or two of black pepper) Divide the tuna and fill both halves of the avocado. Cover the tuna and the rest of the avocado with shredded cheddar cheese. Place under the broiler until the cheese turns brown, but not burnt. Sprinkle the chopped chives over the top of the cheese. Serve and enjoy!
