I managed to pick up some Tri-Tip the other day from a buddy that owns a restaurant Trimmed up....one for cooking sous vide (left) and the other to be frozen 4¼ hours in the sous vide at 132° with NO seasonings (just au naturel) About ½ hour before it went to the grill I rubbed it with some Kosher Salt and granulated garlic Approximately a 3 minute sear on each side PERFECT! Served with sweet potato and fried sprussel sprouts w/bacon
