Had a couple of Short Cut Rump Steaks tonite. What is a Short Cut Rump Steak, aka, Butcher Steak, Rump Steak, Butt Steak, Filet of Sirloin and a host of other names through out the country, depending on your region? Wayyyyyy back in the mid to late 60's, Chuck Clark and Brenda Clark's dad, Ray, taught me that the little, ugly, hunk of meat that lies between the Sirloin pin bone and the Porterhouse on the Loin was the best steak out there. There is only ONE on a side of beef and if you do the numbers, only two on a whole cow Any way, Ray was right and these little tender morsels never made it to the meat case.....hence the name "Butcher Steaks" They were so ugly, no one would buy them, so we took them home for ourselves! OK, found a couple at Sweet Bay the other day in the mark down section...lucky me Seasoned with Dale's Sauce, Kosher salt, pepper and granulated garlic. Man, you talk about a meal!! Cut in half and seasoned
