One of our more "upscale" markets offered 10 oz Hereford NY Strips for $6 each. Not that big a deal, but would make the perfect size for wife and I. So, I send the wife off to the store to pick up a half a dozen........ Not sure what she did for the butcher, but these beauties are over a pound each about 1½" thick!!! Yup, I checked the receipt and only got charged $36 bux ;D So, I seasoned them up, tossed on a pat of butter and vacuum packed them for the freezer. I saved one out for dinner. Here it is after 4 hours at 137°. Dried off and ready for the grill...... Seared quickly at 600° I know I took a photo of it on the plate, but where the heck it went, I have NO clue. I'm using a wi-fi card, wonder if that had any thing to do with it? Served with a loaded baked potato (you'll have to take my word on this) and the steak was a nice pink from side to side...........BUT, it was as tough as a Bottom Round Steak!!! I guess 4 hours was not long enough for those lean Hereford steaks
