A nice thick, about 1¼", Flat Iron Steak seasoned ONLY with Kosher Salt and a couple pats of butter 8 hours at 137° and the ugly of pulling it out of the water bath After a quick sear in the panini press Served with a baked potato and asparagus and the aujus (no pic) The beef looks well done, but it was pink when I cut it Not sure why it turned color Slicing the leftover you can see the perfect med-rare doneness No pic of today's sammie but it was the sliced Flat, mayo, horseradish, tomato on a Martin's Potato Roll. Wife commented it was the best roast beef sandwich she ever had!
