While doing some freezer diving this weekend I found a wet aged (2009!!) 1¼-1½" end cut boneless Rib Eye Thank goodness it was vacuum packed with the FoodSaver I let it thaw a tad, removed from the original packing, treated it with a small dab of Dale's Sauce, kosher salt, applewood smoked black pepper and granulated garlic and topped it with a pat of real butter. It then went for a 4 hour bath in the Demi at 139°*. Boy, the meat really looks like crap when it comes out, doesn't it Out of the pouch After a little treatment with my new butane kitchen torch Served with fresh green beans and "Ugly" sliced tomatoes Man, was this good!! Close your eyes and you would think you were eating Prime Rib in a high end steak house, no kidding!! *139° is where the wife prefers it, so for the time being, 139° it will be on beef. Hey, you do what you have to do....compromise I got about ½ cup of au jus from the pouch and was it tasty!!! Ended up dunking my man size bites into this elixir from the God's! Froze the rest for soup or sauce.
