My favorite part of my favorite cut is the rib cap on a ribeye. I understand that this muscle is called the spinalis dorsi and that it is not only in the rib section, but also the chuck. What cut or cuts that come out of the chuck section have the spinalis dorsi? Would the characteristics of the spinalis be much different in the chuck than in the rib?

I'm not sure about the spinalis dorsi, but in the Chuck is the serratus ventralis, aka the Denver Steak. Take a look for yourself at this LINK and also more on Denver Steaks.
