Something a lil different this evening from the left over pork loin of Wed evening....
My*bastardized* version of Veal Saltimbocca.....
4 cutlets from the grilled Pork Loin, 4 sage leaves, 4 beef salami and 4 smoked ham slices.
All together with toothpicks and into some butter/evoo for a quick browning...about 2 min per side.
That's done and now they are pulled from the heat
Added some Marasla wine to the pan drippings and letting it reduce
Back to the pan to add the Provolone and other cheeses
Served with some of the wine redux, chopped broccoli and garlic mashed taters
