Question from Ed, "I see a lot of Cryon wrapped brisket in stores. However they look very fat and are called a full packaged briskit. My question is; are they worth
buying and do they include both the point and flat briskit. If so, how can it best be trimed for smoking"?


Ed, those cry-o-vac'ed briskets are commonly know as "Packer Trim" or "whole untrimmed brisket". Yes, they contain both the 'point' and the 'flat'. I prefer NOT to trim the brisket at all, until after cooking, but some people do not like all the fat. If you were to trim it, I'd leave at least a ½ inch fat covering where possible.
Cook it fat side up, as the fat has a tendency to do it's own 'basting'. I like cooking mine at 250° for approx 1.5 hours per pound.

About the only place local that has whole brisket is walmart and they are really small on the flat. Went to local meat market and there's didn't look much better. What do you think of buying online?

Yeah, Walmart carries Select grade which has a tendency to be small, plus they like to keep the $$$$ amount down for their customers.

I'd suggest Sam's or Costco for the Brisket. But, you will have to ring the bell and ask, because most times they are not on display. My Sam's carries both the Whole and the Flat, while my Costco only has the Flat. Last trip I got an 8 Lb untrimmed Flat and it was beautiful.

I would shy away from buying online unless you absolutely, postively have no other choice. They are overpriced and the shipping is more than you would pay for one locally.

I would think around your area there would be plenty of specialty butcher/meat shops???? Look for a Kosher butcher or even an Oriental food store, as you will find good meat in the oddest of places at times. If you have a "Smart & Final" (I think that's what I'm thinking of) they should have some nice Prime or Angus Briskets on hand.
